Do you coat your decals in anything once applied to preserve them and stop them going yellow or peeling?
You can just use a standard clear-coat from a hobby shop. The reason decals 'yellow' is from sunlight. Keep the model out of the sun and you should be safe with peeling as well as yellowing. Peeling won't occur if you lay 3 coats of gloss clear on top. No worries ^^
What spray the whole model or apply by brush over the decals only? If so do you have to be careful to avoid brush marks/dust in the decal coat?
If the body has been stripped to a bare shell then that's awesome, just spray the whole thing.
If windows are in then mask them off well and spray light coats (although use enough to get a smooth finish and not the 'orange peel' look). I use the spray cans. Don't use a brush, will leave heavy brush marks and won't be even.
If you like, after the clear-coat has cured for about 2 days then use some polishing compound and this will give the 'real car' shine to the model.
Are your cars stripped or you are wanting to do it as a built model?

Microsol is good stuff! It keeps the decal adhered to the model surface better as well as softening it to contour the shapes of a body.
I always use it when building my models as the softer a decal is when adhering it to the car the better it will hold too.
I used it on the RS1800 Mikkola Escort I built. As you can see the decal on the rear fender moulded perfectly and has never lifted since I built the car 5 years ago. Super happy with the result!
